It is very easy to prepare. You need soy milk without added sugar, with at least 8% soy (the more the better) I used one with 13%. And two tablespoons of lemon juice. The proportion is this: 2 tablespoons of lemon juice for every 500 ml of milk.

Boil the milk. Turn off the heat when the first bubbles begin to form, not before or after.

Remove from the heat and add the two tablespoons of lemon juice, and stir a little. Let it rest for 10 minutes. You will see curd start to form.

Put a strainer in a pot and a very clean cloth inside. Pour all the liquid into the cloth, close and leave in the refrigerator overnight.

The next morning it will be a wonderful consistency, you can save the water and make bread dough with it (I will publish a recipe).
