Whisk the chili (cayenne) together with the cloves, garlic, EVOO and a little water.

Chop the onion and mix together with 3/4 of the grated cheese and oregano to make the stuffing

Soak each tortilla in the chili mixture; if you prefer less spicy, pour just a little with a small spoon and spread it all over the tortilla.

Place the omelet in a frying pan over high heat and let it fry for about 3 minutes.

Add the filling in the center of the tortilla and roll up.

Add a little grated cheese on top and heat in the microwave for 1min to melt it.
