Quick curry of tofu and vegetables with rice

On the one hand, wash and cut into small pieces the vegetables and put them in a microwave steamer case with curry and other spices to taste and a dash of EVOO. Cook for 8 minutes at maximum power.

On the other hand, bring water to boil and cook the rice for 10-12 minutes (you can do it in advance to save time or use a small glass).

Drain the tofu, dice and brown in a frying pan with EVOO, curry and other spices to taste.

Add the cooked vegetables to the pan, a tablespoon of water and 2 tablespoons of coconut yogurt. Stir and cook 2 more minutes to integrate everything.

Serve the curry with the boiled rice.
