Finely chop the onion, red bell pepper, green bell pepper and garlic. Crush the tomato and set aside.

Chop and brown the chicken and the bacon with the EVOO. When they are cooked, add the chopped vegetables and let them fry. Once they are done, add the crushed tomato and let it integrate well with all the sauce.

Add the paprika, turmeric and saffron to the sauce, stirring a couple of times. Add the rice and sauté a little before adding the broth.

When the broth is poured, add the shrimps, peas and beans, cover everything and let it cook until the broth is reduced and the rice is loose. You can add more spices during this time such as granulated garlic, thyme, rosemary, parsley... etc. Once the paella is done, leave it covered to rest for 5 minutes.

Note: the pancetta I used was bought at the butcher's shop. The shrimp, peas and green beans are from frozen.
