In a frying pan put the EVOO with the garlic and onion. In a bowl prepare the mixture with the ginger, pepper, cumin and ground coriander. Add to the pan and stir well. Sauté.

Once the spices are well integrated, add the bell pepper and tomato previously chopped small, the coconut milk, salt and a little grated lemon peel. Cook over medium heat for 15 minutes. Stir from time to time.

Once this time has elapsed, add the cod and cook for about 10 minutes.

Add the spinach and cook for another 10 minutes. And that's it!
