Preparación de la receta

Cut the meat into pieces and boil in a pot with water, salt, 1 onion and 1 clove of garlic. The meat will be cooked when you prick it with a knife and it pierces well.

Remove the meat and set aside. We also reserve two glasses of the cooking water that we will use later.

Heat the pot again, this time with a spoonful of olive oil. While it is heating, cut the other onion into julienne strips and poach it together with a clove of garlic.

When the onion is done, add the tomato and spices to taste (I use Ras Hanut). Cook for a few minutes and add the water that we had reserved from the cooking. Let it cook for 20 minutes over medium heat.

After 20 minutes, we will have the water making chup chup, is when we add the reserved meat and mix well with all the sauce. We will leave it another 20 minutes cooking all together (if necessary, correct the salt and spices).
