Hydrate for 10' the dates in hot water 🌡️. And also hydrate for 10' the gelatine in the cold milk ❄️. Grate the peel of the two lemons. 🍋

Prepare the base with the pistachios, coconut oil, 50gr of dates (about 8 dates) and 1/4 c/p of lemon zest.

For the base, first crush the pistachios and dates separately. Then grind all the ingredients together.

Place the base in the mold.

Prepare the cream with the rest of the ingredients (cream, yogurt, mascarpone, milk, gelatin, dates and lemon). The dates for the cream are 80gr (about 14 dates), and the rest of the zest of the two lemons.

Whip the cream and set aside.

Heat the milk until the gelatin is dissolved and mix with the rest of the ingredients, except the cream ❗.

Add the cream with wrapping motions.

Transfer the cream to the mold and refrigerate.
