Spinach, tomato, mozzarella and mushroom pizza

First soak the quinoa for at least 3 hours.

In the meantime we make the stuffing. Poach an onion until transparent and then add the crushed tomato. On the other hand we make the mushrooms with a little oil and garlic powder until they release all the water and are consumed and are minimally tender.

And the spinach, in 5 minutes in the frying pan is done with a little EVOO.

Once everything is done separately and the 3 hours have passed...we grind the 90g of quinoa together with 40g of water with the spices to taste (grated cheese, garlic powder, onion powder, oregano) until we get a paste. Spread it on a greased baking sheet with parchment paper and bake for 12 minutes at 190 degrees. In the middle of the time turn it over.

Once done, take out and add grated cheese first, then crushed tomato and onion, spinach, mozzarella, cherry tomato and mushrooms. Bake for 10 more minutes until everything is melted and ready.
