Soak the beans in warm water the night before. Red or black beans can be used.

Peel and cut the onion into small pieces and fry it in a pot with 3 tablespoons of EVOO.

When the onion is poached, add the red bell pepper, also cut into small pieces, and fry.

Add the crushed tomato, thyme, bay leaf, cumin and wine and let it reduce for about 5 minutes.

Drain the water from the beans, wash them well and add the beans to the pot. Cover with new water and add salt to taste. Cover the pot and cook until the beans are tender. More or less for 2 hours. *It can also be made with canned beans, in this case with 15-30 min of cooking time is more than enough, although personally I like it better the traditional way.

Stir from time to time and check if the beans are soft. If necessary add more water during cooking. Turn off the heat when they are ready.
