The trick to get the fries extra crispy needs some time, I warn you 😅 I don't mind because it's worth it 🙌🏻

First peel and cut the potatoes as usual. Wash them and let them soak in cold water for an hour. I leave them in a tupper with water.

Once the time has passed you will see that they are more compact. We drain them well with the strainer, and put kitchen paper on the counter to put them on top and absorb the remaining water. With another piece of paper we dry them on top.

We turn on the air fryer to preheat. We are going to have to put the potatoes at 195° for 25', so what I do is set it at 27' so it has those two minutes to preheat while we dry the potatoes.

When there are 25' left in the program, open the basket and quickly add the potatoes so that they do not lose too much heat. Sprinkle a little EVOO spray on top of them, which will help them to get crispy.

Now we just have to wait, and very important so that they are all cooked equally: open the basket every 8 minutes or so to give it a shake so that the potatoes change places.

We keep an eye on them in the last minutes in case they are overdone 🔍 and they would be ready!

Latest comments on different potato cuts from my experience 🧐: - The smaller you cut the potatoes the faster they are done, so for example the ones that need less time are the diced ones or the ones you are going to use later for an omelette. Those are ready in 20' or less 👌🏻 - The most "difficult" to make are the panaderas, but mostly because they are bigger. With these you will have to use a fork to turn them over so that none of them stick to the bottom.
