Soak the lentils and "scare" them (boil them for one minute in cold water), drain.

Chop the vegetables into small pieces. Put oil in a casserole and fry the vegetables in the following order... bell pepper, onion, carrot, garlic, zucchini, potato.

Add spices and salt. Add cold water or vegetable stock and lentils and bring to a boil until the lentils and potatoes are done.
