First we hydrate the texturized soybeans, in my case I put water to boil with: salt, oil, bay leaf and soy sauce (to give flavor and color). I take it out after 5-10 minutes and strain the water.

While the texturized soy was cooking, I chopped all the vegetables. I put a small splash of oil in a frying pan and when it is hot I add the garlic and onion.

I add the peppers, celery and finally the zucchini and let them cook. I add the texturized and hydrated soybeans to sauté them with the vegetables and give them flavor.

Finally I add the crumbled tofu that would do the function of the scrambled egg, I add a little soy to give it color and flavor and ready! Now we have the filling for our vegan burritos! We only need to heat our pancakes and assemble them. I add avocado inside the pancake, I love it 🥰.
