Separate the egg whites from the yolks, whip the egg whites until stiff and set aside.

Mix the egg yolks, the two bananas and the skyr, add little by little the oat flour until it is integrated. You can add vanilla essence, cinnamon or orange or lemon zest to give it more flavor. I added vanilla essence 🤤.

Add the whipped egg whites to the previous mixture in a whirling motion.

Pour the batter into a greased baking pan, place in the lower part of the oven at 180º for about 20 minutes with heat up and down.
