Prepare all the ingredients and the date paste with 70g of date and a little water.

Separate the egg yolks from the egg whites. Whip the egg whites until stiff and set aside.

Beat the egg yolks together with the date paste in a bowl until smooth and creamy.

Add the ground almonds, cinnamon, salt and a little zest of half a lemon. Mix well.

Add the egg whites little by little with wrapping movements.

Bake at 180° for 20-25min. Pierce with a toothpick to check that it comes out dry. Let cool on a wire rack.

Grind grated coconut to taste to make it look like powdered sugar. Prepare the cross of santiago and sprinkle coconut on top.
