First, peel two or three heads of garlic.

Next, take a small saucepan, put the garlic and pour EVOO until it covers them.

Then, add rosemary and chilli to taste (you can also choose other herbs that you like).

Finally, fry the garlic over very low heat for 30/40 minutes, stirring from time to time so that they do not burn and when they have the color of the photo, remove from heat and that's it!

(Garlic is great simply spread on a slice of bread. Don't throw away the leftover oil, it has a great garlic flavor and can be used for cooking or even for adding to homemade sauces).
