✳ INGREDIENTS ✳ ▪︎ 1 tray of mushroom mix, I bought it at lidl. ▪︎ 1 clove of garlic. ▪︎ 1/2 leek. ▪︎ Salt and pepper. ▪︎ 1/4 tsp miso paste. ▪︎ 1 tbsp rice flour. ▪︎ 50ml vegetable drink, I used soy beverage. ▪︎ Chopped peanuts for breading.

✳ HOW IS IT DONE? ✳ Chop the garlic and leek, sauté in a pan with a little oil for 10 minutes, add the chopped mushrooms and season with salt and pepper, cook for about 15 minutes. Add the tablespoon of rice flour and the soy beverage, if you see that it is too thick you can add more. Stir and turn off the heat, add the miso and integrate everything very well, we will see that we will have a manageable dough, let stand about 4 hours to cool well.

Shape into croquettes and roll in chopped peanuts, put in a preheated oven at 250° for about 10 minutes. I had some mushrooms left over so I made a veganesa with them. They turn out very creamy and super yummy, I promise you!
