Take a wheat tortilla and spread it with some crushed tomato.

Cut a piece of bell pepper (whatever it is, I used yellow) into small cubes and slice a mushroom and spread them on top of the tomato.

Add a few spinach leaves on top. Then put cheese (the one you like the most) and a little bit of oregano.

Cover the tortilla with another tortilla and put the quesadill in the oven (preheated to full power) at 180° for about 10 minutes (until you see that the tortilla is golden brown and crispy).

Disguise it with nothing or make the sauce you like the most. I have made a guacamole and the combination has been tremendous!
