In a baking tray, place a good splash of olive oil and the potatoes cut into slices and season with salt and pepper. Cook until done but whole at 180°.

In a frying pan, seal the cod and set aside and remove the skin. In the same frying pan, sauté the onion cut into julienne strips, the peppers in strips, the crushed or grated tomato or cut into small pieces and the finely chopped garlic cloves. Add a bay leaf.

In the baking tray, place a layer of vegetables on top of the potatoes, the cod, and the other layer of vegetables on top. Remove the bay leaf. Add salt and pepper and cook for 10 minutes. Add ground nutmeg, a dash of brandy, chopped fresh parsley and some raw prawns and finish cooking for 5 minutes.
