Marinate the tofu with olive oil, soy sauce, and the spices mentioned above.

Cut all the vegetables, except the baby spinach, which will be whole.

Fry the onion and carrot in a frying pan first, as this is what will take the longest.

When the onion and carrot is almost done add the zucchini. When we see that it is done add the tofu and leave it for a couple of minutes.

Finally, turn off the pan and add the spinach.
