Cauliflower Croquettes

Cook the cauliflower (If you want to do it quickly, in a pressure cooker in 3 minutes, from the moment it starts to boil, it is ready) (If you do it in a normal pot, cook it until it becomes tender).

Cut the onion, garlic and parsley and the cheese in slices so that it is very finely chopped (the cheese can be cut into small pieces).

Once the cauliflower is cooked, drain it well and let it cool (if you want to speed up the cooling process, you can put it in the refrigerator).

When the cauliflower is already cold, we squeeze it with a fork. Put it in a bowl and add the garlic, the onion, the parsley and the cheese that we cut before, and also add a teaspoon of ground pepper, a spoonful of olive oil, a teaspoon of salt and an egg (if it is small, add two, but if it is big, one is enough).

Heat the oven to 200º.

Mix all the ingredients well in the bowl and on a baking paper, impregnated with a little olive oil, and using a spoon, start shaping the croquettes and put them on the baking paper. If you see that the mixture is very liquid, drain the mixture when you have it in your hand and so it will be better and will not spread out).

Once all the croquettes are done, before putting them in the oven, paint them with a brush with a little olive oil, but do not pour too much oil because it will form a puddle of oil around the croquette.

Bake in the oven for about 35-40 minutes (approx. until golden brown) at 200°.

Finally, when they are golden brown, take them out and let them cool a little. To accompany them we can use a sauce or whatever you want, for example I chose hummus, but you can accompany them with guacamole, yogurt sauce...etc. I hope you like them! Enjoy!
