Soak the bulgur in the water for 3 hours (if you want to make less, it is one part bulgur to 3 parts water). After this time, drain the excess water.

Chop the onion, mint and dice the cucumber and add it to the bulgur. Chop the feta cheese and add it along with the peeled and chopped pistachios (I like to chop half and leave the other half whole).

Wash the chickpeas and add them, add the juice of half a lemon if you want to do it like me to give it a little more flavor. And ready! It is much tastier from one day to the next.
