Tender ribs with baked potatoes

Put water in a pot and add the vegetables and the ribs. Let it cook over medium-low heat for at least an hour and a half. After the time we take out the ribs carefully so that they do not break and season to taste. We beat the broth and keep it for other recipes.

While the meat is cooking, peel and cut the potatoes into wedges. In a bowl we mix the potatoes with a dash of EVOO and the spices we like, in my case they have salt, pepper, paprika, onion and garlic powder.

Cover the bowl with film and put it in the microwave at maximum power for seven to ten minutes, shaking it halfway through the time. When the potatoes are somewhat soft, place them on a baking tray.

Preheat the oven to 220° and place the tray with the potatoes in the middle of the oven for 10-15 minutes. After the time, move the potatoes a little and place the meat in the tray and cook at 180° for 10-15 minutes and then at maximum temperature for another 10-15 minutes to brown.

Remove from the oven, let it cool and enjoy a meat that is very easy to debone and tender!
