Wash the cucumber, cut lengthwise and remove the seeds. Cut in half moon.

Finely chop the onion and bell pepper.

We macerate the 3 vegetables with the lemon juice.

Cut the watermelon into cubes, removing the seeds, if any.

Add the crumbled feta cheese and the mint to taste, finely chopped or whole if the leaves are small.

Mix all the ingredients in a bowl, the olives, salt and pepper to taste, the modena vinegar and the extra virgin olive oil.

Serve and enjoy! *Optional put it in the fridge minutes before to make it cooler :)
