Cut the smoked salmon into small cubes and then do the same with the avocado. We leave them in separate bowls.

We also cut the mango into small cubes, and the tomato in the same way.

In another bowl put a little olive oil, the juice of the squeezed lemon and a dash of black pepper. Mix everything together.

Add the dressing prepared in the previous point to the diced smoked salmon and mix well.

With the help of a small plating ring and if you don't have one, make the shape with a piece of albal paper or a small glass. Form each tartar as follows: cover the lower part of the ring with half of the avocado and tomato, then add half of the mango and the upper part with half of the smoked salmon mixture. Repeat the operation to assemble a second tartar.
