Baked eggplant with tomato and mozzarella cheese

Cut the eggplant into thin slices and place them on a baking dish previously coated with olive oil.

Cut the tomatoes into thin slices and place them on top of the eggplant slices, season with salt and pepper and sprinkle with oregano to taste.

Cut the mozzarella into pieces and put them on top of the tomato and eggplant. Optionally you can add an anchovy, as shown in the photo. Bake at 150-180 (depending on oven) degrees with heat up and down until golden brown, and let's eat!
