Pizza with goat cheese and black olives đ€€đ

DOUGH: In a bowl mix flour, salt, crumbled yeast, in my case I used 2-3 grams of dry baker's yeast (1/2 sachet of the yellow Royal), sugar (optional) and warm water. Mix everything very well until it is sticky. At this point add EVOO and continue kneading until the dough is like a ball. Let it rest in a greased bowl covered with plastic wrap for about 1-2 hours, depending on the room temperature.

TOMATO SAUCE: While the dough is rising, we make the tomato. I usually use the crushed tomato from the can. In a bowl suitable for microwave put a spoonful of AOVE and add a pressed clove of garlic and leave it in the microwave for a few seconds until it starts to brown. Then add tomato, oregano, stir well and cover with a plate and microwave until done. It can be made with the garlic in powder, in this case we add tomato, garlic and oregano and cover with a plate and microwave.

CARAMELIZED ONION: Cut the onion into strips and add to the pan with a little oil. Cover the pan over medium heat until it becomes transparent. Then lower the heat and uncover the pan and let it finish browning slowly. Do not add sugar, with a little patience the onion caramelizes with its own sugars.

Now we can assemble our pizza. On the baking paper we put a little flour and pour the dough. Without kneading we give the shape to the base. We flatten and stretch the dough a little from the center without touching the edge. You can add a little flour on top so that it does not stick to your hands.

Now is the most fun part, because we can experiment with the filling. In my case I put: tomato sauce, a slice of ham, caramelized onion, grated cheese, goat cheese, black olives, oregano and a dash of EVOO on top (optional).

Bake the pizza (the oven previously preheated) at 250ÂșC, with the tray in the lowest position. Place the pizza with the parchment paper and bake for about 10-12 minutes.

And ready, it has a crispy and spongy edge inside and the base is very thin đ€€ đ.
