Clean the anchovies

Open them in half, to remove the central spine, except for the tail at the end, which will hold the loins together.

Add a pinch of salt to the anchovies.

Flour both sides.

Dip in egg, previously beaten.

Fry in oil on both sides.

Once fried, place them on absorbent paper to absorb the excess oil/fat.

Plate. Optionally you can add a few drops of lemon juice on top of the boquetones.
