Put the eggplant, the bell pepper, the onion and the garlic (all unpeeled and uncut, whole) in the oven at 180° until they are roasted and very soft. Remove the garlic before, otherwise it will burn.

The onion is usually hard, we finish it in the microwave, until it is soft.

Let cool slightly, peel and cut the vegetables into strips. The eggplant and the bell pepper can be chopped by hand. Chop the garlic very finely.

Mix everything together, add a good splash of olive oil, salt and pepper to taste and enjoy!
