Beat 1 egg, 2 tablespoons of oat flour, 1 pinch of baking powder, a little vanilla essence, the juice and zest of half a lemon and a splash of rice/coconut drink. I make it with this matcha tea one because it has a special touch that I love!

Pour into a cup and microwave for 3 minutes.

Eat directly from the cup or put it on a plate with a touch of cinnamon on top. I add another splash of this drink because I love it. It can simply be served with coffee.
