Prepare the sponge cake by mixing the coconut flour, oil, egg, yeast and water in a bowl until the texture is neither too thick nor too runny. Sweetener can be added to taste. We give a few touches to eliminate the air bubbles and we put it 3 minutes in the microwave. Let it cool completely out of the container.

Prepare the cream, mixing the mascarpone cheese with the yogurt (preferably Greek or protein yogurt, as they are denser). Optional sweetener.

To assemble the tiramisu, cut slices of sponge cake, dip them in coffee and make layers with the cream. Keep in the refrigerator well chilled and enjoy 😋.
