Cut the vegetables (size to taste) and sauté in a frying pan with EVOO. Once done, add the soy and peanut butter to the pan and stir well over low heat until everything is integrated.

Cook rice noodles according to package directions.

Mix well the noodles already cooked in the pan with the mixture of vegetables, soy and peanut butter. And that's it!

If desired, you can add chopped peanuts/sesame on top when serving.
