Wash and slice a zucchini very thin, with the help of a peeler. Put the slices on paper towels side by side without leaving any holes and remove excess water.

In a bowl, mix the tuna, feta cheese and olives (preferably pitted), cut into small pieces and mix well until you have a "dough" that will be placed in the center of the sliced zucchini.

Carefully roll up to form the cannelloni.

In a bowl put a base of tomato, salt, pepper, aove and in my case thyme (you can put the spice you like) put the cannelloni on top of the tomato.

Add a handful of grated cheese and bake in the oven for 15 minutes at 200gr.

Be careful not to burn it, when the cheese is melted and toasted it is ready.
