The first thing to make is the vegetable broth to cook the scorpion fish in it: Put the 2 liters of water in a pot with the onion, leek, bay leaf, carrot and salt. To cook 20 minutes

Then strain the broth and cook the scorpion fish in it for 15 minutes. Remove and let it cool and then remove the bones and skin. After cleaning, it remains 525 g of fish.

Once the fish is cleaned, grind it with the tomato, eggs, evaporated milk and a little of the broth.

Pour into a bain-marie plumk cake pan and bake for 45-50 minutes or until set and golden brown.

Allow to cool and place in the refrigerator for a few hours before removing from the mold to harden further.
