Heat water in a small pot and when it starts to boil add the noodles. Meanwhile we sauté the onion and the leek in slices over medium low heat in a frying pan. When it is transparent add the peppers cut in strips. Now add the cayenne (I added ground) if we like it spicy.

When the noodles are ready we add them to the pan. We can add some sauce that we like now, it is the moment. Then we take two eggs and break them over the vegetables with the noodles and start stirring everything fast and well, with the fire now higher. We let it toast without stopping stirring. Finally we add a dash of rice vinegar (optional) and some sesame seeds if we want.
