Roast the pumpkin. I did it in the microwave for 7 minutes in a microwave safe container. At the same time that the pumpkin is cooked, we poach the onion with a little EVOO and salt.

In a blender, add the roasted pumpkin, the poached onion, the spoonfuls of coconut yogurt and the spices to taste. Grind everything well

If the mixture is too sticky, lighten it with a little of the pasta broth in a pan. If it has the texture we like, we leave it like this.

When it's time to serve, I added chopped almonds, Parmesan, a little grated coconut and basil leaves (the touch it gives, it's great) 🤤 ➡️Puedes add spice, more pepper, chili or cayenne. Whatever you prefer 😄
