Cut all the vegetables into thin slices, try to cut them all with the same thickness. Once cut put the eggplant slices in a bowl with water and salt for 10-15 minutes to lose the bitterness. Then we drain them well with kitchen paper.

Pour the fried tomato with oregano into a baking dish suitable for the oven and place the vegetables one by one on top of the tomato (e.g. Zucchini-Eggplant-Tomato-Peppers-Zucchini-Eggplant...). Once we have already placed all the vegetables we will add a thin thread of AOVE (not much, since with the water that the vegetables release it becomes very juicy) and in this case a little basil (but we can season it to our taste).

First heat the oven to 210°. Once it is hot, place the dish in the oven at 210° for 25-30 minutes. When it is done, take it out and let it rest for 10 minutes.
