Veggie wok with rice noodles

Marinate the chicken with a little oil, ginger and a little soy sauce. Reserve in the refrigerator for at least one hour.

Bring a pot of water to a boil and when it is about to boil add the rice noodles. Mine require 7 minutes of cooking time.

Put a tablespoon of oil in a wok and add a beaten egg and stir. Then add all the vegetables and sauté for about 5 minutes. In this step you can add a little ginger powder to add more flavor and hot sauce.

When the vegetables are sautéed, add the drained rice noodles and a tablespoon of soy sauce. Stir-fry for a couple more minutes and serve!
