Roast the sweet potato (oven or microwave)

You can beat everything at the same time but I recommend first crushing the dates together with the oil and egg whites, then adding the roasted sweet potato and crushing and finally adding the dry ingredients (flour, cocoa, yeast).

The mixture is quite thick but don't worry. If you have problems to beat it, add a small splash of milk to your liking.

Pour the mixture into a small baking pan lined with parchment paper. We put the mold in the oven, 20 - 25' at 180°, previously preheated.

Let it cool down and enjoy, it is SPECTACULAR.

✔️Pueden be 2 whole eggs ✔️ Sweet potato can be substituted by pumpkin ✔️El EVOO can be substituted by coconut oil ✔️Si if you want the vegan version, you can replace the eggs with water + ground flax, or with banana (1 egg=65g banana), but in this case the flavor and texture will change.
