Falafel with healthy yoghurt sauce 🧆

Preheat the oven to 180 degrees 🔥.

Cut the onion 🧅 and the garlic 🧄 . In a frying pan we brown the garlic with a drizzle of EVOO 🌱 over very low heat so that it does not burn. When they are golden brown, add the onion.

Rinse the chickpeas. If you prefer you can do it with natural chickpeas, we only have to soak them overnight. The step is the same, rinse them and set aside. ✨

When we have the onion and garlic ready, we pass both together with the chickpeas to process. I did it in a blender. 🔌

Pour the mixture into a bowl, add the spices 🌾. The ones I used were the ones I like and the ones I had at home, you can be guided by those or use the ones you like the most. Add two beaten eggs 🥚. Mix everything and let stand 15-30min.

On baking paper we spread the dough and shape it, I chose a pancake shape but you can shape it into small balls. It takes approximately 20 minutes, depending on the thickness we use.

For the yogurt sauce 🍦 we only need whipped fresh cheese and add spices: pepper, garlic powder, salt and nutmeg.
