Chop the onion, garlic and carrots and fry in olive oil. First the onion, then the carrot and finally the garlic, otherwise it can burn quickly and leave bitterness. When all the vegetables are tender, add the red wine. We wait for it to reduce and then add the vegetable stock. Over medium heat, stir and add the spices mentioned above and taste for salt. In another frying pan, sear the sirloin on each side and set aside. In the vegetable casserole we are going to pass the blender to grind everything and get the sauce. Once it is liquid, add the 60 grams of dark chocolate and it will melt little by little while we stir.

Now we have the sauce ready, it is time to put the sirloin that we have previously marked together with the sauce. We will leave it for about 10 minutes turning the sirloin over low heat so that it is impregnated with the sauce. The sauce will reduce and thicken. It is up to each one's taste. There will be sauce left over.... so prepare a good piece of bread because you will need it for dipping!!!!
