We start with the sauce. Chop the vegetables in a food processor.

In a frying pan with a dash of olive oil 🫒 brown the garlic 🧄 and then add the rest of the vegetables.

When they are poached add the meat 🥩 and the chopped 🌶 chili pepper 🌶.

Brown and add the wine 🍷. Stir and turn up the heat. Bring to the boil. When the alcohol evaporates add the chicken stock 🍗 . Cook and add the thyme and the halved bay leaf. Cook over low heat until serving.

Boil the potatoes 🥔 in their skins in salted water 🧂.

When they are ready, let them cool and peel. Mash with the help of a potato masher and add the egg yolk 🥚 , Parmesan, flour, salt 🧂 and pepper. Knead everything.
