Gluten-free banana and cream cheese pancakes with skyr

Use a banana (or plantain) that is, if possible, ripe. Mash it with the help of a fork and set aside.

🥚 Beat an egg and mix it with the mashed banana.

🧀 Add the two tablespoons of cheese. I use the fresh cheese with skyr from lidl. Mix well.

If the mixture is too runny, add corn flour little by little until the desired consistency is reached. The pancakes should not be too runny or too thick. You can use any other flour, I used this one to make it gluten-free.

Add a few drops of vanilla essence (optional).

🍳Pour a few drops of oil in a frying pan and spread it evenly with the help of a paper or a kitchen brush, put over medium heat and pour the mixture with a ladle, forming small pancakes, turn over carefully so that they are done on both sides.

🍓 Place them on a plate, one on top of the other. The toppings can be to taste, I used frozen berries and a little cinnamon powder on top. You can use walnuts, apple, 85% chocolate chips.... And many more. They are ready, enjoy!
