Beat the egg and egg whites and spread on a greased shallow dish with a little oil. Microwave at maximum power for 3 minutes or until well set.

Cut the chicken breast into strips and roast in a frying pan over high heat for a couple of minutes. Then add the pesto and continue cooking everything together over medium heat until the breast is well done.

Remove the tortilla from the microwave and spread the tomato. Then add the chicken and pesto mixture on top, roll up and serve.
