Rice noodle soup with vegetables and tofu

While the tofu is marinating (to taste) for 30 minutes, cut all the vegetables and sauté over medium heat until they are well poached (about 10-15 min).

Add spices to taste, in my case salt, pepper, paprika, cumin, sesame oil, soybean oil and rice vinegar. Also the butter

In the last 5 minutes of frying, add the tofu, so that it also fries.

After 5 minutes, add the marinade. Then, add 1L of broth, more or less, (by eye) until the vegetables are well covered (I added water because I didn't have any vegetable broth 😅). And we leave it over medium heat for 30 minutes or until the vegetables are tender.

While the vegetables are cooking, in a frying pan, scramble the eggs.

3 minutes before the vegetables are finished cooking, add the rice noodles, the stir fry and a handful of chia seeds, so that it takes all the flavor of the broth.

If you are one of those people who do not like to eat it very hot, I advise you to wait hahaha 😅 and then you can enjoy the dish ❤️ I have to say that I ate a plate around 14h and until 18h I wasn't hungry. It is quite consistent. I hope you liked it 😘
