Tomato soup with edamame and vegetables 🥣🥕

The first thing we will do is chop the onion and garlic (one or two cloves). Put them in a saucepan with a little oil to brown them over medium-low heat.

When they have browned, add 1L of water or vegetable stock, and wait until it starts to boil. Then add the carrots cut into slices or small cubes (I used baby carrots), the peas (if they are frozen, if not you can add them later) and the crushed tomato (approx. 200g or 250g). Let it cook over medium heat for about 20 minutes, until the carrots are soft.

In a separate pot, boil some water and add the edamame, if they are still in their pods, for about 10 minutes, so that they soften and we can remove the edamame from the inside.

Finally, when the soup is ready, add the edamame and serve, et voilà 🥣.
