Season the liver with salt, garlic and black pepper. Reserve

Slice the tomatoes, potatoes and onion.

In a large skillet, heat the olive oil over low heat. Add the onion, three minutes later the liver and cook, about 2 minutes per side.

Add the tomato, green chile and potatoes. Add 150 ml. of water, a bay leaf, and Mexican oregano to taste. Cook until the vegetables are soft, about 15 minutes. Rectify seasoning.
