Boil the carrots and zucchini so that they are soft.

Once the zucchini and carrots are ready, add them to the sautéed vegetables so that all the flavors are integrated.

Put the eggs and milk in a bowl, season with salt and pepper (I added a little nutmeg) and beat it.

Add the sofrito in the bowl and mix everything carefully (I also added grated cheese to the mixture 😋). Put in a baking pan

Bake at 180° up and down heat for about 15 minutes (depending on the oven). And ready to eat! I served it with a tomato salad
