Clean the mackerel well to leave the loins without bones. Season with salt and pepper, dredge in flour, fry and set aside on a plate.

In the same oil fry (in large pieces) the carrot, onion and garlic. Add the spices. Leave the vegetables al dente!

Add the vinegar, wine or natural cider and water and boil for 10 minutes. Important: put the same amount of EVOO as these 3 things - for 4 mackerels I put about half a glass of each thing.

Put the mackerel back in the pan and let it boil for another 10 minutes. Ready! :)
