Separate egg whites and yolks. Whip the egg whites.

Mix the egg yolks with the almond flour, the juice of a whole orange, the orange peel and the banana (better if it is ripe, so it will be sweeter).

Fold the whipped egg whites into the previous mixture with wrapping motions. Put in the mold and bake for 15 minutes at 190°.

For the topping, chop the chocolate and add the previously heated (but not boiled) cream. Spread the surface of the sponge cake and decorate with more grated orange peel.
