Leave the cashew nuts overnight to soak. If you don't have time, leave them to soak for at least 3 hours.

The next day we rinse them very well and grind them with 1-2 probiotic capsules (the app did not allow me to add this ingredient, so I put soy yogurt because it can also be useful).

Leave to ferment in a transparent bowl (to be able to see the fermentation process) with a covered cloth or with a film with a hole in it but with air in it so that the bacteria can act. 48 hours if we want the cheese flavor to be noticeable. 24 hours if we want a milder flavor.

Add the salt and the Provencal herbs (or the spices you like). Mix well and place it in a round mold or in the shape we want to give the cheese.

We put it overnight in the refrigerator uncovered and the next day it is ready.
